Banana Trail Mix Bars+
Contains: Wheat, Nuts
1 ½ cups (160g) rolled oats
½ tsp (1g) ground cinnamon
Pinch of sea salt
½ tsp (2g) baking soda
1/3 cup (70g) trail mix
2/3 cups (80g) almond meal
1 ripe banana (140g), peeled and mashed
2 tbs (40ml) maple syrup
2 tbs (40ml) coconut oil, melted
2 tbs (30g) Wholesome Child Protein+ Vanilla
1/3 cup (70g) trail mix (optional)
Preheat oven to 160°C (fan-forced) and line a baking dish (22 x 22 cm) with baking paper.
Place all ingredients into a high-speed food processor and process on high for a few seconds until combined.
Transfer batter into the baking dish and spread out evenly using a spatula. Sprinkle another third cup of trail mix evenly on top and flatten with the spatula.
Bake in the oven for 15 mins until golden brown.
Serving and storing leftovers: Serve immediately, store in an airtight container in the fridge for up to7 days or freeze for up to 4 months.
Allergy advice and simple swaps:
- For a gluten-free alternative: Swap rolled oats for gluten-free oats or quinoa flakes.
- For a nut-free alternative: Swap almond meal for seed meal and make sure you are using a nut-free trail mix.
- For an egg-free alternative: Use an egg-replacer such as chia- or flax-egg (1 tbs chia seed meal + 3 tbs water).
