No kid can resist crunchy, meaty sausage rolls, especially when they taste this good. Filled with lamb, zucchini, carrot, celery and onion, its the perfect way to include veggies and protein in one delicious meal.
Lamb Harissa Sausage Rolls

1 tbs (20ml) extra virgin olive oil
1 brown onion (110g), peeled and finely diced
2 garlic cloves (20g), peeled and finely diced
2 celery stalks (120g), rinsed and finely chopped
1 carrot (130g), peeled and finely grated
1 zucchini (190g), rinsed and finely grated
2 tbs (16g) harissa spice (paste or ground)
¾ cup (80g) rice breadcrumbs
¾ cup (180ml) milk
500g lamb mince
5 sheets of preservative-free puff pastry
1 egg, whisked
1/3 cup (55g) sesame seeds (optional)
Preheat oven to 180°C and line two baking trays with baking paper.
In a large frying pan, heat olive oil over medium heat.
Add onion and garlic and sauté for 2-3 mins.
Add celery, carrot, zucchini and harissa and cook for another 2-3 mins. Remove from heat and set aside to cool for a few mins.
In a large bowl, combine breadcrumbs and milk.
Add lamb mince and vegetable mix to the breadcrumb mix and mix well, using your hands.
Take one sheet of pastry and cut it in half lengthways.
Shape the filling into a long tube shape and place half along the centre of the pastry half.
Fold pastry over so that the mince mixture is completely covered.
Cut the sausage roll into 3 pieces and place onto the baking sheet.
Brush with the whisked egg and sprinkle with sesame seeds.
Continue with rest of the pastry sheets.
Bake in the oven for 30-35 mins or until golden brown on top.
Serve with a homemade dip.
Serving and storing leftovers: Serve immediately, store in an airtight container in the fridge for up to 3 days or freeze for up to 4 months.
