As we head towards Halloween, I can’t get pumpkin out of my mind. And what better way to offer it to young kids than in a delicious and easy overnight oat porridge. The mild sweetness of the roast pumpkin together with cinnamon and Protein+ Vanilla helps reduce the need for additional sweeteners. Pumpkin Pie Overnight Oats+
½ cup (55g) quick oats
1 cup (250ml) coconut milk
½ cup (160g) roast pumpkin puree
¼ tsp (0.5g) ground cinnamon
2 tbs (30g) Wholesome Child Protein+ Vanilla
Place all ingredients into a large glass or jar and mix to combine.
Refrigerate for 5 hours or overnight.
Top with banana slices, granola and pumpkin seeds (optional).
Serving and storing leftovers: Serve immediately, store in an airtight container in the fridge for up to3 days or freeze for up to 4 months.
