This delicious layered creamy no-bake dessert is filled with raspberries, cashews, coconut cream and our fabulous pink Superfruits+ powder to dress it up and make your kids go ‘wow’. Each mouthful will burst with yumminess while still delivering the goodness of super berries, vitamin C, zinc, and vitamin D. It is a fabulous recipe to make with your kids and encourage them to measure out the ingredients and create their own mix of layers and cupcake designs.
Raspberry Cheesecake Cups+

¾ cup (120g) almonds
1 cup (180g) Medjool dates, pitted
½ cup (40g) desiccated coconut
1 tbs coconut oil, melted
2 cups (280g) cashew nuts, soaked in hot water for at least 30 mins
2 tbs (40ml) coconut oil, melted
2-3 tbs (40-60ml) maple syrup
2 tbs (40ml) lemon juice
1 tsp (5ml) vanilla extract
1 cup (250ml) canned coconut milk
1 cup (115g) frozen raspberries (plus extra for topping)
6 tsp (24g) Wholesome Child Superfruits+
Line 2 muffin trays (18 holes) with muffin holders and set aside.
To make the base, place almonds, dates, coconut and oil into a high-speed food processor and process until it reaches a fine, crumbly consistency.
Spoon about 1 heaped tablespoon of the mixture into each muffin hole and press down using a small glass or a spoon. Place in the freezer.
To make the filling, rinse and drain the soaked cashews and place into a high-speed food processor along with the coconut oil, maple syrup, lemon juice, vanilla extract and coconut milk (If you don’t have a strong food processor, we recommend soaking the cashews for at least 3 hours or overnight).
Process until smooth and creamy.
Divide cashew cream in two parts.
Spread about 1 tablespoon of the cream evenly on top of each base and place back into the freezer.
Add raspberries and Superfruits+ powder to the second half of the cream and process until smooth.
Spread about 1 tablespoon of the raspberry cream evenly on top of the cashew cream and sprinkle with some extra frozen raspberries.
Place into the freezer to set for about 2-3 hours.
Best eaten within 10 mins out of the freezer.
Serving and storing leftovers: Serve immediately or store in an airtight container in the freezer for up to 4 months.
- Add 12 tbs of Wholesome Child Protein+ Vanilla or Choc to half of the cashew cream for an extra boost.
- Swap raspberries for berries of choice.
- Add a pinch of pure stevia.
- Swap maple syrup for honey.
- Top with crushed nuts or coconut flakes.
