Beef and Veggie Meatballs

Meatballs are a fantastic way to get children to eat vegetables they might normally refuse. These meatballs contain carrot, zucchini, onion and an apple for added sweetness. Kids often enjoy sweet sauces with their meat dishes, but instead of adding processed ones, try serving with Wholesome Child’s Homemade Ketchup.

Ingredients

Method


1 carrot, grated
2 zucchinis, grated
1 onion, finely sliced
1 apple, cored and grated
500g minced beef
2 tsp Italian mixed herbs
1-2 cloves of garlic
1 egg
5 tbsp rice breadcrumbs or wholemeal flour
Coconut oil or avocado oil
Salt and pepper
1. Place onion, garlic, carrot, zucchini and apple in processor and process together.
2. In a separate bowl add mince – break it apart if necessary using a mallet.
3. Add mince to the vegetables and process together.
4. Add egg, breadcrumbs, salt, pepper, Italian mixed herbs and process until a smooth consistency is reached.
5. Roll mixture into small meatballs and place on a baking tray.
6. If baking: Preheat oven to 350ºF place meatballs on a baking tray and bake for 30 minutes for small meatballs and approximately 45 minutes for larger meatballs.
7. If pan frying: Heat oil in large pan and fry for approximately 6–8 minutes on each side, check to see if they’re cooked all the way through.

Tip:
To serve, add mashed sweet potato, noodles or rice. Subsitute rice breadcrumbs with any flour of choice or almond meal. Serve immediately, store in the fridge for up to 3 days or freeze for up to 4 months.
