High Protein Peanut Butter Cookies

These high protein supercharged cookies are a delicious and nutritious substitute for sugar-laden versions. This is the perfect recipe to make with children – it’s simple, fun and requires very little cooking time. But, be careful! They’re highly addictive, even the adults will love eating these too.

Ingredients

½ cup of peanut butter
½ tsp of baking soda
¼ tsp of baking powder
4 tbsp of almond flour
⅓ cup of coconut sugar
1-2 tbsp of applesauce (organic baby puree is the best option or homemade)
½ tsp vanilla powder or extract
1. Preheat oven to 350°F.
2. Place peanut butter, baking soda, powder, vanilla, flour and sugar in a high-speed processor and mix together.
3. Add the applesauce and mix together until a doughy mixture forms.
4. Roll into small balls or flatten with your hand. Use a cookie cutter to create fun shapes.
5. For a crunchier texture, place mixture in the fridge for 1 hour before cooking.
6. Place cookies on a lined baking tray and bake for 8–12 min, they should appear golden brown. The longer you bake them for the crunchier they will become, less time will result in a chewier texture.
7. Remove from oven and allow to cool. The biscuits may appear to be moist but once cooled will harden.

Tip:
Serve immediately. Store in an airtight container for up to 2 weeks or freeze for up to 4 months.
