Sweet Potato Pikelets

These are perfect for the whole family, including babies from seven months and up. They’re loaded with vitamins and minerals and are naturally sweet, yet the addition of chia seeds means they also contain omega-3’s, calcium and magnesium. Make a batch for breakfast, as a lunchbox filler, or for a perfect afternoon snack.

4 eggs
½ banana
1 ½ cups Sweet Potato, Steamed Or Roasted
1 tbsp chia seeds
½ -1 tsp cinnamon
Coconut oil for frying
Himalayan sea salt (optional)
1. Place all ingredients in food processor and process until a smooth consistency is reached.
2. Heat your fry pan to medium heat. Melt your coconut oil.
3. Turn heat to low. Spoon small amounts of your mixture into the pan – small pikelets are better for small hands!
4. Cook for approx. 5–7 mins on the first side. Flip over and cook for approximately 4 mins on the other side.

Tip:
You can serve with any of the following: ricotta cheese, coconut cream or a drizzle of pure maple syrup.
