Wholesome Child Banana Bread

Wholesome Child’s nutritious and delicious banana bread is rich in healthy fats, iron and protein – plus it’s school-friendly! It’s easy to make and a great alternative to commercial banana bread which may be filled with unwanted fats, sugar, sodium and preservatives.

2 large ripe bananas
3 large organic eggs
½ cup coconut milk (or milk of choice)
4-6 medjool dates
½ cup coconut oil
1½ cups of wholegrain spelt flour (you can substitute with flour of choice)
1/3-1/2 cup of coconut sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp Himalayan sea salt
1 tsp cinnamon
1 tsp vanilla powder
1 tbsp of chia seeds
1. Preheat oven to 350°F and coat a medium size loaf tin with coconut oil.
2. Place bananas, eggs, milk, dates, chia seeds and coconut oil in a high-speed blender and process for approx. 1 min – until you reach a smooth consistency.
3. In a separate container, place spelt flour, coconut sugar, vanilla, cinnamon, baking powder, baking soda and salt.
4. Slowly add dry ingredients into the wet mixture and mix together on a medium speed.
5. Pour mixture into a baking dish and sprinkle extra cinnamon on the top.
6. Bake for approx. 45–55 mins, prick with a knife to see if it comes out clean.

Tip:
If nuts are not an issue, you can sprinkle chopped walnuts on the top of the mixture before you place in oven. For babies, eliminate coconut sugar as the dates and banana will be sweet enough. The banana bread will last for approx. 5–6 days in the fridge and can be frozen for up to 4 months.
