Apple and Cheese Loaf

Spice up those lunchboxes with this tasty Apple and Cheese Loaf. This is perfect lunchtime feast as it’s sweetened naturally so your little ones will have the energy to make it through the afternoon. Plus, opting for spelt flour boosts the nutrient content as it’s high in magnesium, iron and calcium for growing bodies!

Ingredients

Method


2 cups wholemeal spelt flour
1 tsp baking powder
½ tsp baking soda
pinch sea salt
1/3 cup coconut sugar
½ tsp ground cinnamon
1 ½ cups apples, peeled and diced
¼ cup mild olive oil
1 cup cheese, grated
½ cup milk of choice
2 large eggs
1. Preheat oven to 180ºC and line a loaf tin with baking paper.
2. In a large bowl, combine the dry ingredients.
3. In another bowl, combine the wet ingredients.
4. Add the dry ingredients to the wet ingredients and stir until combined.
5. Pour batter into the prepared loaf tin and bake in oven for 40-50 mins or until a cake tester comes out clean.
6. Allow to cool on a wire rack.

Tip:
For a dairy-free version simply leave out the cheese. To make it gluten-free, swap wholemeal spelt flour for 2 ¼ cups gluten-free flour + 1 tsp of psyllium husk powder. Serve immediately, store in an airtight container in the fridge for up to 4 days or freeze for up to 4 months.
