Apricot and Cinnamon Compote

Introducing solids to our babies is an exciting time but it can also bring with it a range of new issues such as constipation. This home-made compote is a great way to ensure that your baby does not get clogged up and stays regular.  It can be used in countless ways, including as a stand-alone puree, in yoghurt, mixed with porridge or as a spread on toast or crackers for later on.

6-8 pears, peeled and cored
500g dried Apricots, sulphur-free
1 tsp ground cinnamon
1 vanilla bean pod or ½ tsp ground vanilla powder
1. Place all the ingredients in a large pot and fill three quarters full with filtered water.
2. Bring to the boil and then reduce heat and cover.
3. Let it cook till the water is almost evaporated. This should take at least 45 minutes. If the water evaporates too soon, refill with water and repeat process.
4. Serve with porridge, yoghurt or on its own.

Tip:
The more you reduce the compote the more intense the flavour and thicker the consistency.
