Cheesy Broccoli Bread Dippers

Gluten free and rich with the goodness of greens and protein, these melt in your mouth, tasty Broccoli Bread Dippers make a delicious dinner, side or snack. If your little ones don’t love their daily greens, covering them in gooey cheese and cutting them in fingers for dipping can sometimes be all you need to get them into their little bellies! I love these as a side with soup or stand alone for a warming, nutritious snack or easy mid-week meal. Left overs work well in the lunchbox too!

Ingredients

2 heads of broccoli, trimmed and cut into florets
2 cups grated mozzarella
2 cups grated cheese (low-sodium)
1/3 cup coconut flour (or wholemeal flour of choice)
2 garlic cloves, minced
1 tsp dried Italian herbs
2 eggs
1 tsp sea salt (optional)
½ tsp pepper (optional)


To Boost
¼ cup nutritional yeast


Equipment
High-speed food processor
1. Preheat the oven to 200°C. Line a baking tray with baking paper.
2. Remove the stalk from the broccoli and discard. Place the florets into a food processor and blitz to form rice consistency. Spread the broccoli onto the lined tray, bake for 15 mins.
3. Combine the cheeses in a bowl.
4. Place the broccoli into a mixing bowl with the nutritional yeast, coconut flour, garlic, herbs, egg and half of the combined cheeses. Mix well to combine, season with salt and pepper to taste.
5. Tip onto the lined baking tray, press to an even layer and bake for 25 mins.
6. Top with remaining cheese and return to the oven for a further 10 mins until the cheese is bubbling and golden. Cut into 12 slices and serve with Homemade Tomato Sauce.

Tip:
You can swap the broccoli for cauliflower.

For babies under 1 leave out seasoning.

Serve immediately, store in an airtight container in the fridge for up to 4 days or freeze for up to 4 months.
