Cheesy Cauliflower French Toast With Mushrooms

Cheesy, warm eggy-bread… what’s not to LOVE? This healthy take on classic French toast combines wholemeal/sourdough bread with cauliflower and cheese… and it tastes delicious. Instead of always opting for a sweet version of French toast, try this savoury child-friendly recipe instead.

2 Eggs
½ Cup (125ml) Almond Milk
½ Cup (125g) Cauliflower Puree
2 Tbs Cheese (Mozzarella, Gouda, Swiss), Grated
1 Tbs Chia Seeds
Pinch Sea Salt (Optional)
1 Tbs Extra Virgin Olive Oil, Ghee Or Butter, For Frying
6 Slices Of Wholemeal/ Sourdough/ Gluten-Free Toast
 
For The Mushrooms: (Optional)
1 Tsp Extra Virgin Olive Oil
1 Cup Mushrooms, Finely Sliced
1 Cup Of Rocket Or Parsley (Optional)
1. In a big bowl whisk together eggs, milk, cauliflower puree, parmesan, chia seeds and salt until well combined.
2. Heat oil in a frying pan over medium heat.
3. Dip bread slice in the eggy mixture, thoroughly coating both sides.
4. Place egg-coated bread slice in frying pan.
5. Fry for a few minutes on each side or until golden brown.
6. Repeat with remaining bread slices.
7. In another pan heat the olive oil over medium heat and fry the mushrooms for 2-3 mins.
8. Serve bread individually topped with mushrooms and rocket or parsley.

Tip:
For special occasions, stack the bread with mushrooms and a slice of low-sodium cheese and top with fresh rocket or parsley. Serve immediately or store in the fridge for up to 2 days.
