Chickpea Crackers

I love supercharging everyday foods with nutritious ingredients. These chickpea crackers are a beautiful crunchy option, high in protein, healthy fats and fibre. They’re a healthy snack plain and can be enhanced further with a delicious dip such as hummus or tzatziki! Lunchbox friendly and perfect for snack time – these crackers are quick to whip up and a great source of variety if your child loves crunchy textures.

Ingredients

Method


2 cups chickpea flour
1-2 tbs nutritional yeast flakes
2 tbs chia seeds
½ tsp sea salt
2 tbs olive oil
4 tbs filtered water


Equipment
High-speed food processor
1. Preheat oven to 180C and prepare two baking trays.
2. Place all ingredients to a high-speed food processor and process until a dough is coming together. You can also mix everything by hand if you prefer that.
3. Divide dough into two parts and roll out each part between two sheets of baking paper. Try to roll out quite thin, approximately 3mm thick.
4. Take top sheet off and place rolled out dough onto the baking tray. Bake for 20 mins or until hard to touch (it will crisp up further, when it cools down).
5. Once cooled, break crackers into smaller pieces. Store in an airtight container and serve with favourite dip.

Tip:
Using different cookie cutters, you can also cut out funny shapes to make it more appealing for your child. Serve immediately, store in an airtight container for up to a week or in the fridge for up to two weeks.
