Chickpea Mushroom patties

These quick and easy Chickpea Mushroom Patties are sure to become a family favourite. If mushrooms aren’t popular at your dinner table, no one will ever notice them inside these tasty patties! Serve with tzatziki and steamed greens for a complete nutrient-dense dinner or add them to lunchboxes the next day… that’s if there’s any leftover!

Ingredients

Method


1 tbs olive oil
1 leek, finely chopped
2 garlic cloves, finely minced
200g brown mushrooms, finely chopped
1 tsp mild curry powder
1 tbs lemon juice
400g can chickpeas, rinsed and drained
1 cup rice breadcrumbs


Equipment
High-speed food processor
1. Preheat oven to 180C and line a baking tray with baking paper.
2. Heat oil in a frying pan over medium heat and sauté leek, garlic and mushrooms for 3-4 mins. Allow to cool for a few minutes.
3. Add mushroom mix to a food processor along with the rest of the ingredients and pulse to combine.
4. Form small patties and place on prepared baking tray.
5. Spray or brush with a little olive oil and bake in the oven for 20 mins or until golden brown.
6. Allow to cool. Serve with tzatziki and steamed greens.

Tip:
Swap chickpeas for black beans, butter beans or kidney beans.

Serve immediately, store in the fridge for up to 4 days or freeze for up to 4 months.
