The combination of chickpeas and lamb creates an excellent texture and forms the basis of this delicious lamb meatloaf. It is bursting with flavour and is suitable for the whole family.

500g lamb, minced | |
2 apples, peeled and cored | |
½ brown onion | |
1 tomato | |
½ cup chickpeas | |
3 tbsp rice breadcrumbs | |
1 egg | |
1 tsp cinnamon | |
½ clove garlic | |
2 tbsp coconut milk |
1. | Place the meatloaf ingredients (aside from minced lamb) into a processor and blend together. Once a smooth consistency is achieved place into large bowl and add the minced lamb. Mix together using your hands. |
2. | Place ingredients in a baking tray. Switch oven on at 200ºC and leave to bake for approx 40min. |
3. | In a pan, place coconut milk and cinnamon and bring to the boil turn down heat and simmer for five minutes. |
4. | To make this a baby friendly dish, simply pour coconut milk over a slice of meatloaf and mash it up a bit. Make sure there is lots of extra sauce to tempt little taste buds. |
5. | For older children and adults, leave out the coconut and cinnamon sauce, and simply serve with mashed sweet potatoes or sweet potato wedges and steamed veggies. |
