I’m taking smoothies up a notch… introducing my Dairy-Free Acai Breakfast Bowl. This brekkie is perfect for this time of year when it’s still warm in the morning and a hot breakfast just won’t do! If you haven’t heard about acai, it’s a berry that’s packed with antioxidants to support brain and heart health, making them the perfect morning addition. I’ve paired them with my favourite fruit and used coconut milk to not only harness those satiating fats but make this brekkie dairy-free. The best bit? This bowl can be whipped up in 5 minutes so you can hit the road in no time.

Ingredients

Method


1 large ripe banana
1 cup (160g) frozen cherries
1 cup (250ml) coconut milk
2 tbs acai powder
2 tbs chia seeds
5 cashews, soaked or 1 tbs nut butter
2 Medjool dates, pitted
Optional toppings: banana slices, berries, nuts, seeds
1. Place all ingredients into a blender and blend until smooth and creamy. Place in a bowl and add favourite toppings.

Tip:
Serve immediately or store in the freezer for up to 4 months. Alternatively place leftovers in popsicle moulds and freeze for 4 hours before serving.
