Wholesome Child’s Baked Beans

Baked beans are packed full of iron, protein and fibre, which are essential for growth…but they are often loaded with sugar. So we have given this kiddie (and adult) favourite staple a healthy overhaul. They are sugar-free and full of flavour. Plus they contain ‘real’ tomatoes, which are full of lycopene, a powerful antioxidant, which is released once tomatoes are cooked. Serve as a side dish with eggs and toast, place them in a baked sweet potato topped with a dollop of natural yoghurt or enjoy them on their own.

Ingredients

Method


1/2 tbs extra virgin olive oil
½ brown onion, finely diced
1-2 garlic cloves, finely diced
1 ½ tomatoes, finely diced
1 tsp Dijon mustard
1 ½ cups cooked cannellini/navy/butter/borlotti beans or 1 x 400g canned beans, rinsed and drained.
1 tsp dried oregano
1. Drain and rinse beans well and set aside.
2. In a saucepan, heat oil and cook onions and garlic for 3 minutes until soft.
3. Add tomatoes and mustard and bring to the boil.
4. Once tomato sauce is simmering, reduce the heat and add the beans. Stir to combine.
5. Add oregano and let simmer for 10-15 minutes until the beans thicken.

Tip:
For a sweeter alternative, use our Homemade Tomato Sauce recipe and simply add the beans. Serve immediately, store in an airtight container in the fridge for up to 4 days or freeze for up to 4 months.
