Healthy Gingerbread Men

The festive season is often a time when children are tempted by an abundance of sugary treats and rich desserts. If you are looking for a healthier alternative to balance out all of those sugary treats, check out these fun and delicious gingerbread men.

Ingredients

2¼ cups wholemeal spelt flour
½ cup almond meal
½ tsp baking powder
¼ tsp baking soda
1 tsp cinnamon
1 tsp vanilla
3½ tsp ground ginger
½ cup maple syrup
2 tbps unsweetened apple sauce
⅓ cup coconut oil
1 egg
1 tbsp chia seeds
1. Pre-heat oven to 160ºC and line a large baking tray with parchment or baking paper.
2. Place all the dry ingredients a high speed food processor.
3. Add the wet ingredients and process until a smooth dough is formed (you can also mix by hand).
4. Roll the mixture out on a well floured surface using a rolling pin, if sticky add flour onto roiling pin. Aim for approx ½ cm thick.
5. Using a cookie cutter, cut into gingerbread men shapes. Keep rolling out the dough until it's finished.
6. For mini gingerbead men bake for 15 min for larger gingerbread men bake for 25-30mins or until start to turn golden brown.

Tip:
For a gluten-free version, replace the spelt flour with the Wholesome Child gluten-free flour mix. Recipe can be found in The Wholesome Child book.
