High Protein Peanut Butter Biscuit

This high protein supercharged biscuit is delicious and nutritious substitute for sugar-laden biscuits. It’s the perfect recipe to make with children, its simple, fun and requires very little cooking time. Beware, highly addictive – mum will love eating these too!!

Ingredients

Method


½ cup of peanut butter
½ tsp of baking soda
¼ tsp of baking powder
4 tbsp of almond flour
⅓ cup of coconut sugar
1-2 tbsp of applesauce (organic baby puree is the best option or home-made)
½ tsp vanilla powder or extract
1. Preheat oven to 180°C.
2. Place peanut butter, baking soda, powder, vanilla, flour and sugar in a high speed processor and mix together.
3. Add vital veggie powder and applesauce and mix together until doughy mixture forms.
4. Roll into small balls or flatten with your hand, use a cookie cutter to create fun shapes.
5. For a crunchier texture, place mixture in fridge for 1 hour before cooking.
6. Place biscuits on a lined baking tray and bake for 8-12 min - should appear golden brown.  The longer you bake them for the crunchier they will become,  less time will result in a chewier texture.
7. Remove from oven and allow to cool. The biscuits may appear to be moist but once cooled will harden.

Tip:
If you do not use the vital veggie powder or protein powder, then reduce the applesauce to 1 tbsp. Serve immediately. Store in an airtight container for up to 2 weeks or freeze for up to 4 months.
