Seeded Broccoli Dip

Broccoli is packed with essential nutrients such as fibre, vitamins C, K and potassium to maintain balance in the body. But if you struggle to get your little one to munch on their broc, this dip is just what you’re after! It’s loaded with herbs, seeds and a touch of lemon juice for a little zing, and it’s the perfect dip for carrot sticks or to use as a spread on sandwiches or wraps. Yum!

Ingredients

Method


1 small head broccoli, steamed and roughly chopped
½ cup fresh parsley
½ cup fresh basil
1 garlic clove, peeled
½ cup (80g) toasted seeds (pumpkin, sunflower)
1 tbs lemon juice
2 tbs extra virgin olive oil
1 tbs filtered water
sea salt and pepper, to taste
1. Place all ingredients into a high-speed food processor or blender and process until smooth.
2. Serve as a dip with vegetable sticks or in sandwiches.

Tip:
Serve immediately, store in the fridge for up to 2 days or freeze for up to 4 months.
