Spelt Rugelach

Purim is one of the happiest Jewish holidays and is often celebrated with festive meals and food gifts. This tasty Rugelach is a flakey cookie or pastry perfect for a scrumptious dessert any time of year, but they’re a must-have to add to any Purim festivities or gifts. This version is a traditional pastry with a healthy Chia Raspberry Jam filling to boost your omega-3’s and get a protein hit during the celebration period! I’ve also created a delish Gluten-Free Rugelach, so anyone can enjoy this traditional dish.

Ingredients

Method


Dough:
110g unsalted butter, room temperature
½ cup plain Greek yoghurt or coconut yoghurt
2 ½ tbs coconut sugar
2 cups wholemeal spelt flour


Filling: Chia Raspberry Jam
2 cups (320g) frozen raspberries (or berries of choice)
2 tbs chia seeds
2 tbs maple syrup or raw honey (optional)
2 tbs filtered water
1 tbs coconut oil
1 vanilla pod, insides scraped out or 1/2 tsp vanilla extract
1. Place butter and yoghurt into a food processor and process until well combined.
2. Add coconut sugar and flour and process until a dough is formed.
3. Roll dough into 4 equally sized balls and refrigerate them in an airtight container for 2 hours.
4. For the filling, combine all ingredients in a small saucepan, place over medium heat and bring to the boil.
5. Turn heat down and simmer for around 10 mins, stirring through occasionally. Allow to cool.
6. Preheat oven to 160°C and line a baking tray with baking paper.
7. On a well-floured surface, roll each ball into a circle about 5mm thick. Spread the dough with a thin layer of jam. Using a pizza cutter or knife, cut the circle into 8 triangles.
8. Starting with the wide edge, roll each triangle up, and place the Rugelach, pointy edge tucked under, on the prepared baking tray.
9. Bake for 30 mins or until golden brown. Allow to cool on a wire rack before serving.

Tip:
Serve immediately, store in an airtight container in the fridge for up to 4 days or freeze for up to 4 months. If you're gluten-free, try Wholesome Child's Gluten-Free Rugelach.
