Stewed Apple Crumble

If you’re searching for a warming winter dessert that isn’t packed full of nasties, look no further! This Stewed Apple Crumble is sweetened naturally with the delicious combination of apples, cinnamon and vanilla. Plus, cinnamon reduces blood sugar spikes, so the whole family can enjoy this tasty treat without the risk of a sugar rush before bed!

Method


Apple Mixture
400g apples, peeled, cored and quartered
1 cinnamon stick

Crumble Topping
½ cup (70g) wholemeal spelt flour
1 cup (120g) rolled oats
1 tsp vanilla extract or powder
1 tsp ground cinnamon
¼ cup (60ml) coconut oil, melted
1-2 tbs maple syrup
1. Preheat oven to 180ºC.
2. Cut the apple quarters into chunks.
3. Place the apples and cinnamon in a saucepan and add half a cup of filtered water. Cook over low heat for 5 mins to soften slightly. Drain the water and place the apples into an ovenproof baking dish.
4. Add flour, oats, vanilla, cinnamon, coconut oil and maple syrup in a bowl and mix well.
5. Cover the apples with the crumble mixture and bake for 20-25 mins or until golden brown.

Tip:
For a gluten-free version, swap the wholemeal spelt flour to 1/2 cup of buckwheat flour or 1/2 cup Wholesome Child gluten-free flour mix (1/3 cup buckwheat, 1/3 cup millet, 1/3 cup arrowroot) and substitute the rolled oats for 1 cup of quinoa flakes or puffed quinoa. For a different flavour, try using pears instead of apples or a mix of apples and pears. Serve immediately or store in the fridge for up to 4 days or freeze for up to 4 months.
