Strawberry Beetroot Bliss Balls

Perfect for an afternoon pick-me-up for the whole family, these sweet snacks are loaded with protein, vitamins and energy-sustaining healthy fats. Their pretty pink colour makes them even more of a treat. Enjoy!

Ingredients

Method


1 cup frozen strawberries
¼ cup raw beetroot, grated
3-4 Medjool dates (optional)
1 cup almond meal
1/3 cup coconut flour
2 tbs coconut oil, melted
½ cup (40g) desiccated coconut, to roll balls in


Equipment
High-speed food processor
1. Place strawberries, beetroot and dates into a high-speed food processor and process until smooth.
2. Add rest of the ingredients and process until a smooth dough is forming.
3. Roll into little balls, then roll into desiccated coconut or beetroot powder.

Tip:
Roll in beetroot powder instead of desiccated coconut.

Serving and storing leftovers: Serve immediately, store in the fridge for up to 10 days or freeze for up to 4 months.
