Sweet Potato and Oat Biscuits

If you’re looking for a biscuit that’s delicious and nutritious, you’re in the right place! My Sweet Potato and Oat Biscuits are excellent first finger foods and an easy way to increase veggies into your baby’s diet. Sweet potato is packed with iron, calcium and vitamins B and C which babies need to develop and thrive. The best bit? This recipe has just six ingredients and can be made in under 30 mins! 

Ingredients

Method


1 cup oat meal
2 tbs coconut oil, softened
¼ cup mashed sweet potato
¼ tsp vanilla powder or extract
¼ tsp ground cinnamon
½ tsp baking powder
1. Preheat oven to 180°C and line a baking tray with baking paper.
2. Place all ingredients into a food processor and process until a smooth dough forms (you can also use your hands).
3. Take tablespoon-sized portions of the dough, roll into small balls and flatten with the palm of your hands to form cookies.
4. Place biscuits on baking tray and bake in oven for 12-15 mins or until golden brown.
5. Allow to cool completely before serving.

Tip:
Serve immediately, store in an airtight container in the fridge for up to 4 days or freeze for up to 4 months.
