Introducing these delicious, high-protein biscuits that won’t leave you with crazy kids! Rich in whole grains, healthy fats and the nutritious sweetness of coconut sugar, these healthy treats are a real crowd and tummy pleaser. Baking biscuits is a brilliant activity to enjoy together – and I love that it’s a complete sensory play experience. Did you ever consider that kitchen activities are a perfect life lesson in patience as we wait for the fruits of our efforts to finish in the oven and then cool down before enjoying them? If you can keep those little doughy hands out of little mouths that is!

Ingredients

Method


½ cup (100g) brown rice flour
½ cup (60g) coconut flour
2 tbs (36g) coconut sugar
½ tsp baking powder
1/3 cup (90g) tahini, hulled
2 tsp (10ml) coconut oil, melted
1/3 cup (80ml) filtered water
1. Preheat oven to 180°C and line a baking tray with baking paper.
2. In a bowl, combine all dry ingredients.
3. Add tahini, coconut oil and water to a small bowl and stir until well combined.
4. Add tahini-oil mix to dry ingredients and knead, using your hands, until a dough comes together.
5. Take tablespoons of dough and form into balls. Place them onto the baking tray and squish down with a fork to form cookie shapes.
6. Bake for 10 mins or until golden brown.
