Veggie Quinoa Bites

Finding a lunchbox snack or finger food that’s both delicious and filling can be hard, but have you tried these Veggie Quinoa Bites? They’re packed with veg to fill little tums, plus the addition of quinoa gives the perfect hit of fibre, vitamins and minerals to keep your child firing on all cylinders. By cooking them in mini-muffin tins, these bites are just the right size for a great grab ‘n’ go snack or can be packed into lunchboxes with ease.

Ingredients

Method


Olive oil or coconut oil, for greasing
1 cup (165g) quinoa, cooked
1 cup (250g) vegetables, steamed or roasted
½ cup (15g) baby spinach, finely chopped
½ cup (40g) cheese, grated
1 egg
1 tbs fresh parsley, finely chopped
pinch of sea salt and pepper
Extra cheese for topping (optional)
1. Preheat oven to 180ºC and line and grease a mini muffin tin with oil.
2. In a large bowl, combine all ingredients and mix.
3. Place batter into prepared min muffin trays, pressing down firmly.
4. Sprinkle some extra cheese on top (optional) and bake in oven for 20-30 mins or until golden brown and crispy on top.

Tip:
Serve immediately, store in an airtight container in the fridge for up to 4 days or freeze for up to 4 months.
