Wholesome Child Banana Bread

Wholesome Child’s nutritious and delicious banana bread is rich in healthy fats, iron and protein – plus it’s school friendly! A perfect all-rounder which can be enjoyed by the whole family. It’s easy to make and a great alternative to commercial banana breads which may be filled with unwanted fats, sugar, sodium and preservatives.

Ingredients

Method


2 large ripe bananas
3 large organic eggs
½ cup coconut milk (or milk of choice)
4-6 medjool dates
½ cup coconut oil
1½ cups of wholegrain spelt flour (you can substitute with flour of choice)
1/3-1/2 cup of coconut sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp Himalayan sea salt
1 tsp cinnamon
1 tsp vanilla powder
1 tbsp of chia seeds
1. Preheat oven to 180°C and coat a medium size loaf tin with coconut oil.
2. Place bananas, eggs, milk, dates, chia and coconut oil in a high speed blender and process for approx 1 mins - until you reach a smooth consistency.
3. In a separate container, place spelt flour, coconut sugar, vanilla, cinnamon, baking powder, baking soda and salt.
4. Slowly add dry ingredients into wet mixture and mix together on a medium speed.
5. Pour mixture into a baking dish and sprinkle extra cinnamon on the top.
6. Bake for approx 45-55 mins, prick with a knife to see if it comes out clean.

Tip:
If nuts are not an issue, you can sprinkle chop walnuts on the top of the mixture before you place in oven.  For babies, eliminate coconut sugar - the dates and banana will be sweet enough. The banana bread can last for approx 5-6 days in the fridge and can be frozen for up to 3 months.
