Wholesome Zucchini Crackers

If you’re after that perfect snack cracker to pair with some cheese or your kid’s favourite spread, look no further! Our Wholesome Zucchini Crackers are not only packed with vitamin A and C from the added veg, but by using seeds they’re completely lunchbox-friendly. The thinner you roll them, the crunchier they’ll be. Yum!

Ingredients

Method


1/3 cup pumpkin seeds
¼ cup sunflower seeds
¼ cup sesame seeds
¼ cup flaxseed
¼ cup chia seeds
1 cup buckwheat flour
½ cup zucchini, finely grated
2 tbs extra virgin olive oil
1 tbs filtered water
½ tsp sea salt
1. Preheat oven to 175°C.
2. Place all seeds into a food processor and pulse until smooth. If you don’t want them to become a meal-like consistency, then just give them a few pulses.
3. Add remaining ingredients and process until just combined. If dough seems too dry add another tablespoon of water.
4. Place in between two sheets of baking paper and roll to 3-4mm thick.
5. Remove top sheet off baking paper and transfer to baking tray. Bake for 20 mins or until golden and crisp.
6. Allow to cool on a wire rack then break into pieces to serve.

Tip:
Replace the buckwheat flour with one cup of wholemeal spelt flour. Serve immediately or store in an airtight container for up to 14 days.
